Whichever one has a fresh edge.

I'd go with Dexter Russell.

Have t needed to sharpen them yet, but I have an Apex Edge pro II. I've used it on my Henckels and they're razors now. Hold an edge real well to.

Dexter Russel and a accusharp hand sharpener. Cheap, and easy to keep very sharp. I have been using the same few knives for a couple years now, and don't see a need to replace them anytime soon. The bubba blades have a sweet handle, but too much money for a knife.

A stone is probably the best way to truly sharpen a knife, but takes time and skill. I like the hand sharpener because it's quick, and can sharpen it back up every few fish.

Stones are only as good as user. And they're very limited. A good blade takes more than one stone. My final is as smooth as glass and still polishes the edge like a mirror. But I have 5 different abrasive levels so it's pretty easy to put a great edge on a knife. Also important to sharpen both sides of the edge exactly the same.

I use a Forschner breaking knife for big fish, and Dexter Russel fillet knives for smaller stuff.

Don't be making fun of the cheap China blades. If you know how to sharpen knives you can shave with them for a week. I use a leather stropping wheel for real sharp

You talkin' to me from across this country? I forge my own knives with good old American steel to insure quality. This model is my Isis Head Chopper (very popular in the Middle East now)

Thank you for the suggestion on the Apex Pro. I have been sharpening my knives with a bench stone but it's gone walk about and I need something to sharpen my knives again. Like kblue, I am going to get a knock off on Ebay since the real deal goes for $300..
