yellow jack
so i got two decent sized yellow jacks this am and i keep hearing how good they taste etc.... but i keep reading about ciguetara in yellow jacks...... grrr now im scared to try and eat it........ any recipe suggestions or is it not safe to eat them.......

Definitely dangerous. Don't eat them..let me know your address and I'll pick them up for you.
Seriously, they are one of my favorite fish to eat...I wouldn't worry about ciguatera. I've eaten dozens of them and never had a problem. They are great sushi, grilled, fried, really any way you want to cook 'em.
Here's some poke-style yellow jack I made a couple months ago..cut the fish into small cubes, add soy sauce, a little sesame oil, green onions, sesame seeds and crushed red pepper, let marinade in the fridge for a couple hours. Eat on its own, over cold sushi rice, or with avocado slices (my favorite).

that sounds good, funny as much asi love sushi i have never done it with any muttons or grovers or anything..... need to look into that... i love sesame and soy when ido stir fry in general too

I'm a big fan of any of Pfishin recipe and I make that one all the time. In fact, I recently stumbled on to the 'recipe/fish cleaning tips' threads. Great stuff. Thanks Rory some of yours with the pics are great.

i didnt bleed or gut them right away they have been in cooler on ice since 10 am or so... so not sure i should do it raw... prob betteri cook them.

They'd be fine raw as long as they've been iced...when I fish the bridges in the Keys, I don't gut or bleed my fish for up to 48 hours until I get home...they are fine for sushi.

ahh no shiii!!!
yeah i had like a bag or so of ice left in the cooler so they werent aubmerged in ice.... just on top of it but cold nonetheless.... were fun to catch too i have never gotten any only heard of them....had a decent couple days fishing... one mutt and these two guys..... and hooked a7- 8 foot nurse last night. that was fun on 30lb

I make an ice brine in one of my coolers, and use it just for fish on those long Keys trip...take a 25 lb block of ice, and about 50 lbs of ice cubes. Add 1/2 a bucket of clean ocean water...will make a nice slush that keeps your fish as cold as can be..it will hurt your hands to reach in there. And don't open the cooler except to put fish in there, or let FWC inspect it. Insist that they reach in there if they want to check your fish..after about 10 seconds, they usually give up pretty quick

that sounds one great way to protect fish quality...even from FWC. Yjack was great for sashimi and fry.
