After seeing CookinMan's recipe on the front page for so long, decided to try it tonight with some nice thick mangrove filets. Deviated from his recipe a bit, used a little less butter and added some capers to the sauce. Sauce didn't come out too thick, but it was really good. Served with rosemary oven roasted potatoes and steamed artichokes with hollandaise sauce. As they say, when the lady is happy, I'm happy... 8)

I just saw this - Looks like it turned out great.


BTW....if you were to put the fish in flour then the pan, instead of the eggwash before the pan, you would have made 'picatta'...

So glad this worked well for you !!
