Mild and firm they are best kept simple and not overpowered with a lot or heavy spices or seasonings. Some fresh herbs and seasoning and some butter baked 350 for about 10 - 15 minutes. I like to crumble up some Ritz crackers and roll the fillets in them then bake.
Dreaming the dream that one day I can be as good as some of the boatless pros and catch some 12 inch mangrove snapper.

The cereal thing is good but the butter flavor from the Ritz is the best. I use the cereal when I want to add a crunchy texture to the fish. Trust me try the Ritz.

OK here it is ... simple
A few filets of golden tile.

spinkle small amounts of:
salt
pepper
garlic powder
and dip in egg .

Then put in crushed up corn flakes

Fry each side 2-5 min. depending on thickness. (I fry real hot)

Done!

I baked some as well but I prefer fried.

Sounds excellent flavor but not overpowering on a mild good eating fish.

It is the most melt in your mouth fish I have had. REAL MILD. With the soft mild fish and the crunchy breading together, the taste is awesome!
