Bro, I cooked it 4 the wife, son & my friend & they loved it.
I defrosted it in water, got 6 fillets that were 6inches long, 4inches wide & an inch thick. Then I remembered what you said about the fingers. I got 10 fingers one inch thick, one inch wide & 8inches long.
I seasoned them in Adobo Completa, dipped in juevo & battered in Progreso Panko like you said............CO---JO---NE!!!!
Its was delicious bro. I'm still eating now.

plenty of bait moving around the jetty, good water color
caught a few baracuda a couple fat keeper mangos and a 25lb bonita
little bro was fishing more in the cut and he caught a big jack, a smaller tarpon, and then fought a 100+lb tarpon for about a half hour before it chewed through his leader

Just because it is the record doesn't mean that people don't break it daily. The reason many igfa records aren't broken is because of the stupid rules that they have and people don't want to go through the hassel and expense. I personally have caugh a few bonita over 20 lbs weighed on a boga and never once have I thought of going to get the igfa record. First off I don't have the money to certify the stupid scale, secondly I am not clear on the rules about leader length etc and i don't think many are and finally who wants the record for bonita. lol. We caught one off of bill bags on the rocks by the platforms that was 6ft long and took two guys to bring onto the platform. What can I say it was a slow day. The eel was so fat it couldn't ball up like the little ones do. It was unhooked and released. I do have a pic but i got to look for it as it was taken with an old school camera.
The secret is a really big hook and a large chunck of bait.......shhhhh.....don't tell anyone. That record is as good as yours.

BTW, I cut the line close to the mouth to save my sinker & swivel. So I released him too for the enjoyment of others.
